Anyone have experience with making homemade pasta/noodles?
Last evening I was invited to a very casual dinner party with the promise of learning how to make homemade pasta.
OMG, was it ever amazing!!
We did four different types of pasta...gnocchi, tortellini, angel hair and linguini.  The host and some of his friends (amazing talents including one very creative professional chef) all pitched in with amazing garlic and marinaras, seasoned pork belly and more.  All washed down with copious quantities of red wine, of course.
It's a lot of work (the kneading to get the consistency with the gluten is key).  One of the gals had them try her gluten-free flour with less than good results.  The host was quite insistent on a certain quality of flour (double zero) not available at most grocery stores, for best results.

What is your experience with homemade noodles?

Thought this thread was going to be about Hannah Barron. LOL

Wife bought me the pasta attachment for Christmas to make noodles with our Kitchen Aid. Love cooking but noodles I have yet to explore.

We have been making some our own noodles and pasta for a few years.  Been buying no 1 semolina flour and blending it about 50/50 with AP for making ravioli and noodles for soup.  I have seen where some suggest blending the semolina with 00 so I may have to give that a try some time.

We do prefer to make our own, but throwing a quick lasagna together with "ready to bake" noodles is kind of hard to pass up on a work night.
