Anyone have experience with making homemade pasta/noodles?
Last evening I was invited to a very casual dinner party with the promise of learning how to make homemade pasta.
OMG, was it ever amazing!!
We did four different types of pasta...gnocchi, tortellini, angel hair and linguini. The host and some of his friends (amazing talents including one very creative professional chef) all pitched in with amazing garlic and marinaras, seasoned pork belly and more. All washed down with copious quantities of red wine, of course.
It's a lot of work (the kneading to get the consistency with the gluten is key). One of the gals had them try her gluten-free flour with less than good results. The host was quite insistent on a certain quality of flour (double zero) not available at most grocery stores, for best results.
