We have a former HC as our O-Line coach: Sparano. He did a great job this year getting basically 5 new guys to play as a unit.

Sparano has done a good job this season, but that wouldn't make him a good play caller. After his head coaching stint with the Dolphins he only lasted a single season as OC for the Jets. In that season he had a bottom 1/2 rushing attack and one of the worst passing offenses in the entire league.

This was more of a comment on the Vikings as an attractive coaching destination. 
As for calling plays, I would prefer that Zimmer find someone he really trusts and hand over the play calling duties - retaining the ability to slip in a defensive play call as needed.  I would rather have the head coach in charge of the whole game on game day and not laser focused on just half of the game.

Del Rio also had the Broncos defense in the Super Bowl. He knows how to use the talent he's given. That was his springboard back into a HC position. My point is, I don't necessarily know if he needs the HC position again, at least not in the near future.
