I think he has a tremendous amount of talent, but really hasn't consistently shown in on the field at Clemson. He definitely has faced a lot of adversity, but he seems like a risky pick. I do like him better than Kancey and agree with you that he can fit our scheme. I think it comes down to whether or not Flores feels he can make him into a great Pro. I also think that Smith would be a great pick for us in a trade down. A true disrupter up the middle which we haven't had in years. The kind of guy that abuses Bradbury every time we face a team with an elite Nose Tackle.
Every year I actually look for the kind of players you're describing. Players with elite level talent but were inconsistent in college for one reason or another (think Diggs, Hunter). Like those guys, I think Bresee is going to be a better player in the NFL than college.
I love Mazi Smith, but I don't think he's right for us. We need inside pass rush and he really doesn't offer much of that. Not as much as Bresee anyway. I think too many are focused on the nose when our bigger need IMO is 5T.

Mazi is a straight traits projection. Stout as can be but I think its really 50/50 if he can become a 1x1 winner as a pass rusher. The one wildcard is that in Flores schemes you could really leverage him on stunts & designed pressure packages to play up his athleticism. I like Breese a lot if the health checks out. He can play up and down the line with his hand in the ground and win consistently. Outside of health he's shown the production you're looking for.
I don't know squat about the college prospects, but would love to build from the trenches out.
