I don't see Zimmer going anywhere soon but I do think that for whatever reason Stefanski wanted to stay put. By having the team deny the interview it takes the heat off him. DeFilippo had the same thing happen to him last year with the Eagles and Jets. It didn't seem to bother him a bit.
It could be very beneficial to Stefanski's development as a coach. He will have worked with some pretty impressive coaches in his time in MN(at least league perception wise) with Childress, Bevell, Turner, Shurmur etc. Having survived al the changes he obviously has an impressive personality and coaching ability so using that exposure to make his own system/name/style could pay long term dividends. Career arc wise a jump to OC this year would have been pretty impressive/aggressive.
I have to think his family having roots here combined with some longer range plan for him with the team would make this a good move for both parties, it doesn't look good for him or Shurmur if he refuses and interview so this is a good way to take a mulligan if you aren't ready to make the move. I could see Filippo moving on in a year or two which could end up a good fit for Stefanski at that time and some great experience in the meantime while his family gets to stay in MN and not in NYC.
Now just solve the QB issue asap.

A lot can happen in 2 years. I thought Bruce Arians would be in Arizona for a long time since he worked so hard to finally get a Head Coaching job, but he only lasted 5 seasons and walked away. The Cardinals have a lot of holes to fill including QB. They only have 50 players under contract and $22 million in cap space. They won't be able to sign Cousins and will probably have to draft a QB during a rebuild process. If we can't get to the Super Bowl in the next two years and start regressing, I can't see Zimmer sticking around. It might not be up to him as he and Spielman could be shown the door.
I could be wrong but I think we are a long ways from Zimmer and Spielman being shown the door. I guess a lot can happen in two years though, I guess we'll see.
Stefanski has to think that one way or the other the OC job is likely to open again as soon as next year. If flipper is as good as advertised he will be goes for a HC gig, if he doesn't push the O to a new level Zim may decide that he made the wrong move and let Flipper move on and Stefanski gets his shot.

Not really odd, Philly did the same thing with Defilippo last season. He was still under contract as is Stefanski.
Ultimately, the Vikings haven't done anything other than win a playoff game on a miracle at home and get trounced by another team. I'd like to see some consistency this year and make the playoffs again before I start worrying about a guy being an OC one-and-done.
Last year was really fun, but we aren't talking the Patriots here. The Vikings have a bunch to prove yet and you can look at the volatility of the NFL year to year to be concerned that Minnesota could take a step back in 2018. Its not out of the question. They need to make the right decision at QB, have that guy perform and get incrementally better.

Honestly, I think they want to bring in some of the play-call optimization and RPOs that Flip did with the Eagles.
I would be shocked if Flip were here for more than 1 year. Vikings know that it wasn't Shurmur that made this offense run. It wasn't Case or Diggs or Thielen or Reiff or anyone else. It was a combination of all of them.
Take Shurmur out and replace him with Flip, add in a little Cook. If the Vikings get the QB right and can avoid too many injuries, their offense should be even better next year and that will write Flip's ticket whether he deserves it or not.
When Zim came over from Cincy he promised Marvin he wouldn’t take his guys, perhaps Shurmur wasn’t listening when he had the same conversation with Zim...
